Ingredients

3 tbsp brown sugar
¼ cup butter, melted
1.5 - 2 cups salt and pepper CauliPuffs, powdered
blank
8 oz cream cheese, softened
â…“ cup condensed milk
1 fresh lemon juice
1 tbsp fresh lemon zest
blank
Lemon curd
Directions
Preheat your oven to 325°F. Grease or line a baking pan with parchment paper, leaving some overhang for easy removal later.
In a mixing bowl, combine the CauliPuffs crumbs, brown sugar, and melted butter. Stir until well combined and press the mixture firmly into the bottom of the prepared pan to form the crust. Use a silicone spatula or a flat-bottomed glass to help compact the crust.
Bake in the preheated oven for about 20 minutes or until the edges are set.
While the crust is baking, make the cheesecake filling. In a separate bowl, beat the cream cheese, condensed milk, lemon zest and lemon juice until smooth and creamy.
Remove the crust from the oven and let it cool.
Pour the cheesecake filling over the baked crust and spread it evenly with a spatula.
Cover the baking dish with plastic wrap and refrigerate the cheesecake bars for at least 4 hours, or preferably overnight, to set and chill.
Once the cheesecake bars are fully chilled, drizzle the lemon curd over the top.
Use the parchment paper overhang to lift the cheesecake out of the pan. Slice into bars and serve chilled. Enjoy your delicious lemon cheesecake bars!
