Natural Flavors
How Are "Natural Flavors" Defined?
How Are "Natural Flavors" Defined?
The U.S. Food and Drug Administration (FDA) defines natural flavor in the Code of Federal Regulations (CFR), Title 21, Subpart B § 101.22(a)(3) as follows:
The term “natural flavor” or “natural flavoring” means the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating, or enzymolysis, which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional.
In simpler terms, a natural flavor must be derived from one of the natural sources listed above—such as fruits, vegetables, herbs, or animal products.
Any flavoring ingredient that does not originate from these natural materials is considered an artificial flavor under FDA regulations.
What Are Natural Flavors Derived From?
What Are Natural Flavors Derived From?
Natural flavors can come from plants, animals, or natural cultures. According to FDA guidelines, these are the three main sources:
- Plants: Spices, fruits or fruit juices, vegetables or vegetable juices, herbs, bark, buds, roots, leaves, or other similar plant materials.
- Animals: Meat, seafood, poultry, eggs, and dairy products.
- Natural Cultures: Edible yeast and fermentation products.
In short, natural flavors are created by extracting flavoring components from these natural sources—rather than synthesizing them in a lab.
Is It Normal for Compounds to Be in Snacks?
Is It Normal for Compounds to Be in Snacks?
Yes — it’s completely normal. Everything in the natural world, including the foods we eat, is made up of elements, compounds, and different states of matter. Even water is a chemical compound (H₂O).
An apple, for example, naturally contains thousands of flavor compounds. When bitten into, these compounds interact with the senses of taste and smell to create its signature flavor. It’s these natural compounds that distinguish one variety—like a McIntosh—from another, such as a Gala.
In food manufacturing, natural flavors are created by identifying and extracting the same types of compounds that occur in nature. These flavors are then used to highlight or enhance the taste of foods in consistent, enjoyable, and recognizable ways.
Why Can’t Companies Always Share the Details of Natural Flavors?
Why Can’t Companies Always Share the Details of Natural Flavors?
It’s common for people to ask for a detailed breakdown of what’s inside a natural flavor. However, this information isn’t always easy—or even possible—to share.
Natural flavors are typically developed and supplied by specialized flavor houses. The exact formulations, ingredients, and production processes used to create those flavors are considered proprietary recipes and are protected as intellectual property.
Because of this, companies that purchase natural flavors (like snack or food brands) often receive only general information about the ingredient’s source and compliance—not the full recipe itself. This ensures that the unique flavor creations developed by the flavor manufacturer remain protected while still meeting all FDA and labeling requirements.
