Directions
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Remove the outer leaves from the cauliflower and trim the stem so that it sits flat. Cut the cauliflower into 1-inch thick slices to create "steaks."
In one shallow dish, add milk, all-purpose flour, corn starch, salt and paprika. In another shallow dish, place the panko breadcrumbs mixed with crushed white cheddar Caulipuffs. Dip each steak into the milk mixture followed by rolling it in the breadcrumbs, pressing gently to adhere the breadcrumbs on both sides.
Transfer the steaks onto the baking sheet and bake for 25-30 minutes. In the meantime, make the sauces.
For the green sauce, add all the ingredients to the blender and blend until smooth.
For the healthier cauliflower cheese sauce, add ½ cup water in a saucepan followed by white cheddar Caulipuffs and cook on low heat until it is dissolved and has reached a thick consistency.
