Directions
Preheat your oven to 425°F (220°C).
In a baking sheet, combine the cauliflower florets and chickpeas, drizzle with olive oil and sprinkle the spice mixture over them and toss until they are well coated.
Spread the cauliflower and chickpeas in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and the chickpeas are crispy.
While the cauliflower and chickpeas are roasting, prepare the whipped feta dip. In a food processor or a blender, combine the feta cheese, greek yogurt, garlic clove, lemon zest, lemon juice. But wait, there's more! I've added an extra twist with the delectable Caulipuffs, perfectly seasoned with a blend of salt and pepper. These snacks are non-gmo, gluten-free, soy free, uses avocado oil, has nothing artificial AND they are baked. What more can we ask for? They are the perfect addition to take this creamy goodness to a whole new level of yumminess.
Once the roasted cauliflower and chickpeas are done, remove them from the oven and let them cool slightly.
Swirl the feta onto a plate and top it with roasted cauliflower and chickpea. Finish with some lemon juice, cilantro and white cheddar flavored @caulipuffs for that satisfying crunch!
